Carte d’Or – 75% Bouzy Pinot Noir, 25% Bouzy Chardonnay Grand Cru.
The grapes are hand selected on the vine for optimum maturity, then gently pressed to extract the best first- run juices. The must is cold clarified before undergoing thermoregulated fermentation at 18 degrees without malolactic fermentation. Vinified on lees for 7 months in stainless steel vats before blending with 25% reserve wines before bottling.
Aged in natural temperature of 10 degrees in chalk cellars. Bottled aged on lees for a minimum of 4 – 5 years. Disgorgement date laser etched on base of the bottle.
Dosage 5g/l
Fine and lively bead with marked red fruit and brioche aromas. Fresh and vinous on the palate. It has a distinctive, well-structured and balanced mouthfeel.Carte Rose – 60% Bouzy Chardonnay, 40% Bouzy Pinot Noir

100% of grapes are exclusively from southeastern vineyard of Bouzy (chalky subsoil covered with a rich seam of alluvium) The grapes are hand selected on the vine for optimum maturity, then gently pressed to extract the best first- run juices. The must is cold clarified before undergoing thermoregulated fermentation at 18 degrees without malolactic fermentation. Vinified on lees for 7 months in stainless steel vats before blending with 20% reserve wines before bottling. Minimum bottle-aged on lees 3 – 4 years.
Dosage 7g.
Disgorgement date is laser etched on the base of the bottle
The large proportion of Chardonnay makes this wine unique and gives finesse and length, Pinot Noir gives the salmon colour and body. Nose of plum and leather, almond aroma

65% Bouzy Chardonnay, 35% Bouzy Pinot Noir.

Vinified on lees for 7 months in stainless steel vats before blending with 25% reserve wines before bottling.

Lively ultra-fine bead and aromas of delicate butter brioche, citrus and white flowers. Palate is dense and voluptuous and extremely elegant with a fresh finish for a wine which has been aged for a lengthy period.
